VITALITY

Summer is the essence of vitality, full of energy and spirit. Long, bright days full of color, people, nature, water, fresh food, abundance and joy. In order to stay connected to the vibrance and vibration of this summer time, it helps to stay connected to the quieter vibration, energy and spirit within us. We can do this by intentionally creating time daily to connect to self…morning meditation, taking a moment in the afternoon to rest, a simple yet effective morning yoga sequence, a walk in nature, a meal with a friend, calmly cooking a healthy recipe, pranayama of any kind, quietly listening, a gentle swim…I host a lot during the summer and I use these examples regularly to reconnect to myself and recharge my energy and spirit. If feeling overwhelmed, perhaps this list can remind all of us how easy and powerful it is to shift to a quieter energy.

FARM FRESH

GREEK SALAD

Farm Fresh Greek Salad

I love an easy Greek salad recipe as a flavorful, refreshing summer side dish. Farmers market veggies and farm stand feta cheese make all the difference. If you make it ahead for a gathering, save a few mint leaves to add right before serving.

INGREDIENTS…

FOR THE DRESSING:

FOR THE SALAD:

  • 1 English cucumber, cut lengthwise, seeded, and sliced ¼-inch thick

  • 1 green bell pepper, chopped into 1-inch pieces

  • 2 cups halved cherry tomatoes

  • 5 ounces feta cheese, cut into ½ inch cubes

  • ⅓ cup thinly sliced red onion

  • ⅓ cup pitted Kalamata olives

  • ⅓ cup fresh mint leaves

INSTRUCTIONS:

  • Make the dressing: In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, mustard, salt, and several grinds of pepper.

  • On a large platter, arrange the cucumber, green pepper, cherry tomatoes, feta cheese, red onions, and olives. Drizzle with the dressing and very gently toss. Sprinkle with a few generous pinches of oregano and top with the mint leaves. Season to taste and serve.
